Tropical Sweet and Sour Pork

ingredients

  • 1 (¾-1 pound) pork tenderloin, cut into 1 inch cubes
    1 tablespoon Instant Gourmet Caribbean Isles Seasoning
    2 tablespoons canola oil
    ½ cup chopped onion
    ¼ cup chopped green bell pepper
    ¼ cup chopped red bell pepper
    1 (8 ounce) can pineapple chunks in own juice, drained, juice reserved
    2 tablespoons fresh lime juice
    2 teaspoons cornstarch

directionsSprinkle pork with Caribbean seasoning, coating well on all sides of pork. Heat a large nonstick skillet over medium-high heat for 2 minutes.  Add canola oil to skillet, swirl to coat. Add pork; sauté until pork is browned (6-7 minutes).  Transfer pork to bowl; cover to keep warm. Add onion and chopped peppers to skillet; sauté 3-4 minutes.  Stir in pineapple chunks. Whisk reserved pineapple juice, lime juice and cornstarch. Add to skillet; stirring until thickened (2-3 minutes). Add pork and any accumulated juice to skillet; cook 2-3 minutes. Serve immediately.

Serving Suggestion: Serve over cooked white, brown or wild rice.
