Salmon Alla Rustica

ingredients

  • 4 (4-6ounce) all-natural Atlantic Salmon Fillets
    2 teaspoons Instant Gourmet Original Blend Seasoning
    2 tablespoons California Olive Ranch Miler’s Blend Extra Virgin
    Olive Oil
    ¼ cup chopped onion
    ⅓ cup dry white wine (such as Sauvignon Blanc)
    1 (14.5 ounce) can quartered artichoke hearts, drained
    1 (8ounce) can tomato sauce
    ¼ cup sliced Kalamata olives
    chopped parsley (optional)

directionsRinse salmon; pat dry with paper towels.

Heat a nonstick skillet over medium-high heat for 2 minutes. While skillet is heating, season salmon with Instant Gourmet Seasoning. Add oil to skillet; swirl to coat. Add salmon, skin side up; bronze for 2 minutes. Turn; bronze other side for 2 minutes. Reduce heat to medium-low; continue to cook until salmon just flakes with a fork (4-6 minutes). Remove to 4 plates; keep warm. You may remove and discard salmon skin if desired.

Add onion; sauté until onion is translucent (about 3 minutes). Remove skillet from heat; stir in wine, scrape up any browned bits from bottom of skillet. Return skillet to medium-low heat; stir in artichoke hearts, tomato sauce, and Kalamata olives. Serve sauce over salmon fillets; garnish with chopped parsley, if desired.
