Stir-Fried Shrimp, Snow Pea and Walnut Salad

Amount: 2 Servings

  • 1 (12 ounce) package Royal Asia Crispy Walnut Shrimp
    1 tablespoon water
    1 tablespoon + 1 teaspoon white wine vinegar
    1 teaspoon soy sauce
    ½ teaspoon International Collection Toasted Sesame Oil
    ¼ teaspoon salt
    ¼ teaspoon freshly ground pepper
    1 tablespoon canola oil
    ¼ pound snow peas, trimmed
    4 cups mixed salad greens

  1. Cook shrimp according to package directions; transfer to bowl. Thaw sauce and walnut packets according to package directions.
  2. In small bowl, combine water, vinegar, soy sauce, sesame oil, salt and pepper. Stir in sauce packet; set aside.
  3. In non-stick skillet, heat oil over medium-high heat until hot (about 2 minutes). Add walnuts; stir-fry for 30 seconds. Add snow peas; continue to stir-fry until snow peas are crisp-tender (about 45 seconds). Add to bowl with prepared shrimp; toss to coat.
  4. In large bowl, toss greens with sauce packet mixture. Divide greens between 2 dinner plates; top with shrimp mixture. Serve immediately.
