Pan Seared Salmon with Mango and Avocado Relish

Serves 2

Ingredients

  • Two 6oz Alaskan King Salmon Fillets
  • Chef Paul Salmon Magic Seasoning, to taste
  • 1 tablespoon Olive Oil
  • 1 Shallot Minced
  • 1/3 Cup Hogue Fumé Blanc

Directions

  1. Place a skillet over Medium High Heat for 2 minutes. Sprinkle salmon fillets with the salmon magic.
  2. Add Olive Oil to the pan, swirling to coat. Place Salmon Fillets Flesh side down in the pan, and sear for 2 minutes, Turn over, and Sear the other side for an additional 2 minutes. Remove them from the pan and set aside.
  3. Reduce heat to medium low, add the shallots, and cook till they turn translucent, about 2 minutes longer. Take pan away from the heat and add the Wine, scraping any browned bits from the pan.
  4. Add the salmon fillets back to the pan and coat them in the pan juices, and cook till salmon begins to flake.
  5. Serve with the Avocado Mango Relish over top.

For the Relish

  • 1 ripe mango, peeled, seeded, diced
  • 1 tomato, seeded, diced
  • 2 green onions, finely sliced
  • 1/4-cup fresh limejuice
  • 1 jalapeno chili, minced
  • 1 California Haas avocado, peeled, seeded, diced

Directions

  1. Combine first 5 ingredients in bowl. (Can be made 3 hours ahead; refrigerate.)
  2. Stir in diced avocado and season to taste with salt and pepper.
