Shrimp Scampi
Serves 4
Ingredients
- 1 pound large fresh shrimp, peeled and deveined
- 2 tablespoons olive oil
- Your favorite seafood seasoning, to taste
- ½ cup Rosenblum Cellars Vintner’s Cuvée Chardonnay
- ½ teaspoon hot sauce (about 3 shakes from the bottle)
- 2 tablespoons butter
- 1 teaspoon fresh lemon juice
- Salt, to taste
- Fresh parsley, chopped
Directions
- Heat a large non-stick skillet over medium-high heat for one minute. In the meantime, season the shrimp with your favorite seafood seasoning.
- Add one tablespoon of the oil to the hot pan and swirl to coat. Add the seasoned shrimp and sauté for three minutes. Remove the shrimp from the pan and set aside.
- Add the Rosenblum Cellars Vintner’s Cuvee Chardonnay to the same pan and return to the burner. Simmer the wine until it is reduced by three-quarters. Add the hot sauce, butter and lemon juice. Use a whisk to swirl the butter around the pan until melted. Season the sauce with salt, to taste. Return the shrimp to the pan and add the chopped parsley. Toss to coat the shrimp and serve.
